Method
Preparation
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix the honey and harissa paste until well combined.
- Place the salmon fillets on a baking sheet. Drizzle them with olive oil and season with salt and pepper.
- Brush the honey-harissa mixture over the salmon fillets.
Baking
- Bake for about 15-20 minutes or until the salmon flakes easily with a fork.
Cooking the Rice
- While the salmon is baking, rinse the rice under cold water.
- In a pot, combine the rice and water or broth. Bring it to a boil, then reduce the heat, cover, and let it simmer for about 15 minutes or until the rice is cooked.
- Fluff the rice with a fork and stir in the fresh dill.
Serving
- Serve the baked salmon over the dill rice and enjoy it with sautéed veggies or a side salad.
Notes
Check the salmon while it’s baking to avoid overcooking. For more flavor in the rice, try adding lemon juice or zest. You can substitute dill with other herbs like parsley or cilantro. Store leftovers separately in airtight containers for up to 2 days.
