Hobo Casserole Ground Beef

Ingredients
  

For the casserole
  • 1 tablespoon olive oil For cooking the ground beef
  • 1 lb ground beef Browned and drained
  • 1 medium onion, chopped For sautéing
  • 2 cloves garlic, minced For flavor
  • 4-5 medium potatoes, thinly sliced Layered over the beef
  • 1 teaspoon dried Italian seasoning For seasoning the potatoes
  • 1/2 teaspoon paprika For added flavor
  • 1 1/2 cups shredded cheddar cheese For topping
  • 1/2 cup grated Parmesan cheese For topping
  • 1/2 cup beef broth To keep the potatoes moist
  • 1/4 cup milk Optional for creaminess

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 lb of ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes. Drain excess fat.
  3. Add 1 medium chopped onion and 2 minced garlic cloves to the skillet. Cook for 3-4 minutes until onion is soft.
  4. Spread the cooked beef mixture in the baking dish. Layer 4-5 thinly sliced potatoes on top, seasoning with salt, pepper, 1 teaspoon dried Italian seasoning, and 1/2 teaspoon paprika.
  5. Sprinkle 1 1/2 cups shredded cheddar cheese and 1/2 cup grated Parmesan cheese on top. Pour 1/2 cup beef broth around the edges and optionally drizzle with 1/4 cup milk.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes until potatoes are tender and cheese is melted.
Serving
  1. Garnish with fresh parsley if desired and serve hot.

Notes

Customize vegetables, use different cheeses, or adjust seasonings according to your taste. For a lighter version, substitute ground beef with ground turkey or chicken, and use sweet potatoes for a unique twist.
