  • 6 pieces egg whites
  • 1/2 cup cottage cheese
  • 1 cup spinach (chopped)
  • 1/4 cup bell pepper (diced)
  • 1/4 cup onion (diced)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine egg whites and cottage cheese, then whisk until smooth.
  3. Stir in the chopped spinach, diced bell pepper, and onion. Season with salt and pepper.
  4. Grease a muffin tin with cooking spray or oil.
  5. Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 15-20 minutes, or until the bites are set and lightly golden.
  7. Allow to cool slightly before removing them from the muffin tin.
Serving
  1. Serve warm, plain or with a side of salsa or your favorite sauce.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-5 days. They can be frozen for up to 2 months. Reheat in the microwave when ready to eat. Ensure egg whites are at room temperature for better whipping.
