Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine egg whites and cottage cheese, then whisk until smooth.
- Stir in the chopped spinach, diced bell pepper, and onion. Season with salt and pepper.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes, or until the bites are set and lightly golden.
- Allow to cool slightly before removing them from the muffin tin.
Serving
- Serve warm, plain or with a side of salsa or your favorite sauce.
Notes
Store any leftovers in an airtight container in the refrigerator for about 3-5 days. They can be frozen for up to 2 months. Reheat in the microwave when ready to eat. Ensure egg whites are at room temperature for better whipping.
