Preparation
- Heat the whole wheat tortilla in a pan over medium heat for 30 seconds.
- Spread cottage cheese evenly on the tortilla.
- Slice the avocado and layer it on top of the cottage cheese.
- Add fresh spinach and sliced tomatoes.
- Season with salt and pepper to taste.
- Roll the tortilla tightly around the filling and slice in half to serve.
Notes
For extra flavor, add a sprinkle of red pepper flakes or hot sauce. Store leftovers tightly wrapped in the refrigerator for up to one day. Best enjoyed fresh.
