  • 1/2 cup peanut butter (creamy, unsweetened)
  • 1 Tbsp honey
  • 1/2 cup almond flour
  • 1 Tbsp almond flour
  • Approx. 48 pieces pretzel twists (plain or salted)
  • 1/2 cup dark chocolate chips

Method
 

Preparation
  1. Line a medium-sized baking sheet with parchment paper.
  2. In a large mixing bowl, combine peanut butter and honey. Mix until well combined.
  3. Add almond flour to the peanut butter mixture. Stir until it resembles cookie dough.
  4. Scoop about 1 teaspoon of the peanut butter mixture onto one pretzel. Place a second pretzel on top to make a sandwich.
  5. Repeat this with the remaining peanut butter mixture, placing each pretzel sandwich on the lined baking sheet.
Melting Chocolate
  1. Put chocolate chips in a small bowl. Microwave them in 30-second intervals, stirring each time until melted. This usually takes about 2 minutes.
Coating
  1. Dip one half of each pretzel bite into the melted chocolate and return it to the baking sheet. Do this until all bites are coated.
  2. Carefully place the baking sheet in the fridge. Let the chocolate cool and harden for about an hour before serving or storing.

Notes

These bites are delicious on their own or served with fresh fruit like apple slices or bananas. They can be stored in an airtight container in the refrigerator for about a week. For longer storage, freeze them separated with wax paper to prevent sticking.
