  • 4 pieces fresh peaches, sliced Choose ripe peaches for the best flavor.

  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Batter
  • 1 cup whole wheat flour or almond flour For gluten-free option, use gluten-free flour.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup almond milk Use dairy-free options for vegan.
  • 1/4 cup chopped nuts (optional) For added crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or a small amount of oil.
  2. In a large bowl, combine the sliced peaches, honey or maple syrup, lemon juice, vanilla extract, cinnamon, and nutmeg. Mix well.
  3. Transfer the peach mixture into the prepared baking dish, spreading it out evenly.
Make the Batter
  1. In a separate bowl, mix together the flour, baking powder, and salt.
  2. Stir in the melted coconut oil and almond milk into the dry ingredients until you form a batter. Optionally, add chopped nuts for extra crunch.
Combine and Bake
  1. Spoon the batter evenly over the peaches in the baking dish.
  2. Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the peaches are bubbly.
  3. Remove from the oven and let it cool slightly before serving.
Serving
