Preparation
- Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray or a small amount of oil.
- In a large bowl, combine the sliced peaches, honey or maple syrup, lemon juice, vanilla extract, cinnamon, and nutmeg. Mix well.
- Transfer the peach mixture into the prepared baking dish, spreading it out evenly.
Make the Batter
- In a separate bowl, mix together the flour, baking powder, and salt.
- Stir in the melted coconut oil and almond milk into the dry ingredients until you form a batter. Optionally, add chopped nuts for extra crunch.
Combine and Bake
- Spoon the batter evenly over the peaches in the baking dish.
- Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the peaches are bubbly.
- Remove from the oven and let it cool slightly before serving.
Serving
- Serve Healthy Peach Cobbler warm, with vanilla yogurt or whipped cream on top.
