  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup natural nut butter (like almond or peanut butter)
  • 1 ripe banana, mashed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • optional nuts, dried fruit, or chocolate chips Add as desired

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, mix together the rolled oats, honey or maple syrup, nut butter, mashed banana, vanilla extract, cinnamon, and salt until well combined.
  3. If desired, fold in any optional add-ins such as nuts, dried fruit, or chocolate chips.
  4. Spread the mixture evenly into the prepared baking pan and press down firmly.
  5. Bake for 20-25 minutes or until golden brown.
  6. Remove from the oven and let cool before cutting into bars.

Notes

To keep bars fresh, store in an airtight container at room temperature for up to a week. Refrigerate for up to two weeks or freeze for up to three months. Press the mixture down firmly in the pan for better shape.
