For the Chicken
  • 1 lb chicken breast, cooked and shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
For the Tacos
  • 6 small whole-wheat tortillas
  • 1 cup chopped tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup chopped olives
  • Fresh parsley, for garnish

Method
 

Preparation
  1. In a skillet over medium heat, add olive oil and shredded chicken. Season with garlic powder, onion powder, paprika, salt, and pepper. Cook until heated through.
  2. Warm the tortillas in a separate pan or microwave.
  3. Assemble the tacos by placing the chicken mixture on each tortilla. Top with chopped tomatoes, lettuce, feta cheese, red onion, and olives.
  4. Garnish with fresh parsley and serve immediately.

Notes

Best served fresh. Consider offering extra toppings on the side like sliced avocados, sauces, or additional herbs. If leftovers are stored in an airtight container, they can last up to 3 days. Keep toppings separate to avoid soggy tortillas.
