  • 1 cup dates, pitted Ensure dates are soft. Soak in warm water if needed.
  • 1 cup nuts (such as almonds or walnuts) Can be substituted with seeds if needed.
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup shredded coconut Optional ingredient.
  • 1/4 cup nut butter (such as almond or peanut butter) Modify flavor with different nut butters.
  • 1 tsp vanilla extract
  • pinch salt

Method
 

Preparation
  1. In a food processor, combine the pitted dates and nuts. Process until they are finely chopped.
  2. Add unsweetened cocoa powder, shredded coconut (if using), nut butter, vanilla extract, and a pinch of salt.
  3. Process the mixture until it is sticky and holds together well.
  4. Scoop out tablespoon-sized portions and roll them into balls with your hands.
  5. Place the formed balls on a plate and refrigerate for at least 30 minutes to firm up before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for about 3 months. Let thaw slightly before consuming. Experiment with different nuts, nut butters, or add seeds for extra texture.
