Preparation
- In a food processor, combine the pitted dates and nuts. Process until they are finely chopped.
- Add unsweetened cocoa powder, shredded coconut (if using), nut butter, vanilla extract, and a pinch of salt.
- Process the mixture until it is sticky and holds together well.
- Scoop out tablespoon-sized portions and roll them into balls with your hands.
- Place the formed balls on a plate and refrigerate for at least 30 minutes to firm up before serving.
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for about 3 months. Let thaw slightly before consuming. Experiment with different nuts, nut butters, or add seeds for extra texture.
