Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mashed bananas, peanut butter, honey, and vanilla until well combined.
- Stir in the oats, chocolate chips, baking soda, and salt until the ingredients are nicely combined.
- Drop tablespoon-sized portions of the batter onto a lined baking sheet.
Baking
- Bake for 10-12 minutes or until the edges are golden.
- Let them cool completely before serving.
Notes
These cookies can be served with a scoop of vanilla ice cream or Greek yogurt. Store in an airtight container at room temperature for up to five days or in the fridge for up to a week. Freeze for up to three months, separated by parchment paper.
