  • 2 pieces ripe bananas, mashed Make sure they are very ripe for sweetness.
  • 1 cup oats Use certified gluten-free oats for a gluten-free version.
  • 1/2 cup peanut butter Use natural peanut butter for a healthier option.
  • 1/2 cup chocolate chips Can substitute with vegan chocolate chips for a vegan option.
  • 1/4 cup honey or maple syrup Substitute honey with maple syrup for a vegan option.
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the mashed bananas, peanut butter, honey, and vanilla until well combined.
  3. Stir in the oats, chocolate chips, baking soda, and salt until the ingredients are nicely combined.
  4. Drop tablespoon-sized portions of the batter onto a lined baking sheet.
Baking
  1. Bake for 10-12 minutes or until the edges are golden.
  2. Let them cool completely before serving.

Notes

These cookies can be served with a scoop of vanilla ice cream or Greek yogurt. Store in an airtight container at room temperature for up to five days or in the fridge for up to a week. Freeze for up to three months, separated by parchment paper.
