Preparation
  1. In a mixing bowl, combine basil, minced garlic, olive oil, red wine vinegar, salt, and pepper. Blend until well-combined but still chunky.
  2. Drizzle olive oil over the halibut steaks and season them generously with salt and pepper. Let them marinate for about 30 minutes.
Grilling
  1. Preheat your grill to medium-high heat, ensuring it's hot enough for a good sear.
  2. Cook the halibut steaks for about 4-5 minutes on each side, until they flake easily with a fork.
Serving
  1. Let the halibut rest for a few minutes, then drizzle chimichurri sauce over the top before serving.
