Preparation
- In a bowl, mix the minced chipotle peppers, garlic, lime juice, cumin, paprika, salt, and pepper.
- Add the chicken breasts to the marinade and coat well. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
Grilling
- Preheat the grill or grill pan over medium-high heat.
- Remove the chicken from the marinade, letting excess drip off, and place on the grill.
- Grill for 6-7 minutes on each side or until the chicken is cooked through and has nice grill marks.
- Let the chicken rest for a few minutes before slicing.
Notes
For extra flavor, marinate the chicken longer, up to 2 hours. Make sure your grill is preheated for better grill marks and flavor. Let the chicken rest after grilling to keep it juicy.
