Ingredients
  

For the marinade
  • 2 pounds chicken breasts
  • 2 pieces chipotle peppers in adobo sauce, minced
  • 4 cloves garlic, minced
  • Juice of 2 limes Use fresh lime juice for best flavor.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • as needed olive oil for grilling Lightly oil the grill grates.

Method
 

Preparation
  1. In a bowl, mix the minced chipotle peppers, garlic, lime juice, cumin, paprika, salt, and pepper.
  2. Add the chicken breasts to the marinade and coat well. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
Grilling
  1. Preheat the grill or grill pan over medium-high heat.
  2. Remove the chicken from the marinade, letting excess drip off, and place on the grill.
  3. Grill for 6-7 minutes on each side or until the chicken is cooked through and has nice grill marks.
  4. Let the chicken rest for a few minutes before slicing.

Notes

For extra flavor, marinate the chicken longer, up to 2 hours. Make sure your grill is preheated for better grill marks and flavor. Let the chicken rest after grilling to keep it juicy.
