  • 2 cups Greek yogurt
  • 1 cup sugar or sugar substitute
  • 3 large eggs
  • 1 teaspoon vanilla extract

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 unit lemon (optional) For added flavor

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare your cake pan.
  2. In a bowl, combine the Greek yogurt, sugar, eggs, and vanilla.
  3. In another bowl, mix the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in lemon zest if desired.
Baking
  1. Pour the batter into the prepared pan and bake for 30-35 minutes.
  2. Allow the cake to cool before slicing.

Notes

Make sure all ingredients are at room temperature before starting. Do not overmix the batter for the best texture. For extra moistness, cover the cake with plastic wrap as it cools.
