Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract if using.
- Gradually add the dry ingredients to the wet mixture until it forms a dough. Divide the dough in half, wrap each half, and chill in the refrigerator for about 30 minutes.
- Roll the chilled dough to about ¼-inch thickness on a floured surface. Use cookie cutters to cut out oval or gem-like shapes.
Baking
- Bake the cookies for 8–10 minutes or until the edges are lightly golden.
- Allow them to cool completely on cooling racks.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze baked cookies without decorations for up to three months.
