Ingredients
  

For the Cookie Dough
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened Ensure it's fully softened but not melted.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
For the Icing
  • 3 cups powdered sugar
  • 2 tbsp meringue powder
  • 5 tbsp warm water (adjust as needed)
  • as needed Gel food coloring (purple, teal, pink, etc.) Experiment with different colors for unique styles.
  • as needed Edible gold dust or luster dust For a gem-like shine.
  • as needed Fine sanding sugar or clear sparkling sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract if using.
  4. Gradually add the dry ingredients to the wet mixture until it forms a dough. Divide the dough in half, wrap each half, and chill in the refrigerator for about 30 minutes.
  5. Roll the chilled dough to about ¼-inch thickness on a floured surface. Use cookie cutters to cut out oval or gem-like shapes.
Baking
  1. Bake the cookies for 8–10 minutes or until the edges are lightly golden.
  2. Allow them to cool completely on cooling racks.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze baked cookies without decorations for up to three months.
