Method
 

Preparation
  1. Slice the bananas into bite-sized pieces.
  2. Spread a small amount of peanut butter on one slice and top with another banana slice, creating a sandwich.
  3. Place the banana sandwiches on a baking sheet lined with parchment paper.
  4. Freeze for about 1 hour.
  5. Meanwhile, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl until smooth.
Coating
  1. Dip each frozen banana sandwich into the melted chocolate, allowing the excess to drip off.
  2. Place the chocolate-covered bites back onto the parchment-lined baking sheet.
  3. Sprinkle with sea salt if desired and freeze again until firm.

Notes

Store in an airtight container in the freezer for up to two months. Don’t skip the freezing time to ensure the bites hold their shape.
