Preparation
- Slice the bananas into 1/2-inch pieces.
- Cover a baking sheet with parchment or waxed paper to prevent sticking.
- Arrange the banana slices flat on the baking sheet, ensuring they don’t touch each other. Place the sheet in the freezer for at least 30 minutes.
Chocolate Coating
- While the bananas are freezing, place the chocolate chips in a microwave-safe bowl. Microwave on high in 30-second intervals, stirring between each, until the chocolate is melted and smooth.
- Stir in the coconut oil until well combined and glossy.
Coating the Bananas
- Retrieve the banana slices from the freezer. Using a fork, dip each slice into the melted chocolate, letting any excess chocolate drip off.
- You can also use a spoon to coat the banana slice on a tray, chilling and flipping for an even coat.
- Place each coated banana slice back on the prepared baking sheet and repeat until all slices are coated.
Freezing
- Return the baking sheet to the freezer for another 30 minutes.
- Once fully chilled, transfer the banana bites to a freezer-safe storage container, where they can be stored for up to three weeks.
Notes
These frozen treats are best served right out of the freezer. For an added touch, drizzle some extra melted chocolate over the top or sprinkle with chopped nuts or shredded coconut before serving. They make a fun dessert on their own or can be incorporated into a sundae or dessert platter.
