Ingredients
  

For the Salmon
  • 4 pieces salmon fillets Fresh or thawed if frozen.
  • 2 tablespoons olive oil For drizzling.
  • to taste Salt and pepper To season the salmon.
For the Mango Salsa
  • 1 piece ripe mango, diced Choose a ripe mango for the best flavor.
  • 1/2 piece red onion, finely chopped
  • 1 piece red bell pepper, diced
  • 1 piece lime, juiced For brightness in the salsa.
  • 2 tablespoons chopped fresh cilantro

Method
 

Preparation
  1. Preheat your grill or oven to medium-high heat.
  2. Season the salmon fillets with salt and pepper, and drizzle them with olive oil.
Cooking
  1. Grill or bake the salmon for about 5-6 minutes on each side or until it is cooked through.
  2. While the salmon is cooking, prepare the mango salsa by combining the diced mango, red onion, red bell pepper, lime juice, cilantro, and a pinch of salt in a bowl.
  3. Mix everything well to create a vibrant mango salsa.
Serving
  1. Once the salmon is done cooking, serve it topped with the mango salsa.

Best served immediately with a side of rice or a simple green salad. Store leftovers separately in airtight containers.
