Main ingredients
  • 2 large cucumbers
  • 4 slices bread (whole grain or your choice)

  • 1 tablespoon dill (fresh or dried)
  • 1 teaspoon lemon juice
  • salt and pepper to taste

Method

Preparation
  1. Slice the cucumbers thinly and sprinkle with a little salt. Let them sit for 10 minutes to draw out excess moisture.
  2. In a bowl, mix the cream cheese, mayonnaise, dill, lemon juice, salt, and pepper until well combined.
Assembly
  1. Spread the cream cheese mixture on each slice of bread.
  2. Layer the cucumber slices on top of the cream cheese mixture on two slices of bread, then top with the other slices of bread.
  3. Cut the sandwiches into quarters and serve immediately or pack them for a picnic.

Notes

For added flavor, experiment with different herbs like parsley or chives. For a kick, add a pinch of cayenne pepper or some red pepper flakes to the cream cheese mixture. Using different types of bread, such as rye or sourdough, can give your sandwiches a unique twist. These sandwiches are best served fresh and can last up to a day in the refrigerator.
