Ingredients
  

For the filling
  • 8 oz Feta cheese Crumbled
  • 2 tablespoons Fresh herbs (like dill or parsley) Chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Cracked pepper To taste
  • 2 cups Spinach or other greens Optional, sautéed
For rolling
  • 1 package Phyllo dough Thawed
  • 1/4 cup Olive oil For brushing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, crumble the feta cheese and mix it with chopped fresh herbs, minced garlic, and cracked pepper.
  3. If you’re using spinach, sauté it in a little olive oil until just wilted. Let it cool and then mix it into the feta mixture.
  4. Take your phyllo dough and lay out a few sheets on a clean surface, brushing each layer with olive oil.
Assembly
  1. Take a scoop of the feta mixture and place it at one end of the phyllo.
  2. Fold the sides over the filling and roll it tightly into a log shape, sealing the ends with a bit of olive oil.
  3. Place the rolled phyllo on a baking sheet and brush the outside with more olive oil.
Cooking
  1. Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy.
  2. Let it cool slightly before slicing and serving.

Notes

Serve warm; slice into bite-sized pieces for appetizers or serve as part of a main meal. Optional: drizzle with olive oil or lemon juice for enhanced flavor. Work quickly with phyllo dough to prevent it from drying out.
