  • 4 large Eggs Cooked to desired doneness
  • 1 cup Cheese (mozzarella or cheddar) Shredded
  • 4 oz Cooked bacon or sausage Chopped
  • 1/2 cup Tomato sauce For spreading on muffins
Toppings
  • 1 cup Spinach or other vegetables Chopped, optional
  • 1 tsp Seasonings (salt, pepper, Italian herbs) For seasoning

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Split the English muffins in half and place them on a baking sheet.
