Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour, spooned and leveled
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 – 1/2 teaspoon nutmeg, to taste Adjust to your preference.
Wet Ingredients
  • 2 tablespoons melted butter, cooled to room temperature
  • 1 large egg, room temperature
  • 1 cup eggnog, room temperature
  • 1 tablespoon sugar
  • 1/4 teaspoon rum extract
  • 1/2 teaspoon vanilla
For Cooking
  • Oil or cooking spray for frying

Method
 

Preparation
  1. In a large bowl, whisk together the flour, baking powder, salt, and nutmeg. Set aside.
  2. In a separate medium-sized bowl, combine the melted butter, egg, eggnog, sugar, rum extract, and vanilla. Whisk until smooth.
  3. Pour the wet mixture into the flour mixture. Gently fold the ingredients together using a rubber spatula or wooden spoon, leaving some flour streaks.
Cooking
  1. Preheat an electric griddle to 350°F or heat a frying pan over medium heat. Lightly grease with oil or non-stick cooking spray.
  2. Pour the batter onto the griddle or frying pan in about 1/4 cup measurements. Cook for 2-3 minutes, or until small air bubbles form on the uncooked side.
  3. Flip the pancakes and cook the other side for an additional 2-3 minutes until golden brown. Repeat with the remaining batter.
Serving
  1. Serve warm with plenty of maple syrup drizzled on top.

Notes

For a festive flair, garnish with a sprinkle of nutmeg or cinnamon, and consider adding fresh berries or banana slices.
