Preparation
- In a large bowl, whisk together the flour, baking powder, salt, and nutmeg. Set aside.
- In a separate medium-sized bowl, combine the melted butter, egg, eggnog, sugar, rum extract, and vanilla. Whisk until smooth.
- Pour the wet mixture into the flour mixture. Gently fold the ingredients together using a rubber spatula or wooden spoon, leaving some flour streaks.
Cooking
- Preheat an electric griddle to 350°F or heat a frying pan over medium heat. Lightly grease with oil or non-stick cooking spray.
- Pour the batter onto the griddle or frying pan in about 1/4 cup measurements. Cook for 2-3 minutes, or until small air bubbles form on the uncooked side.
- Flip the pancakes and cook the other side for an additional 2-3 minutes until golden brown. Repeat with the remaining batter.
Serving
- Serve warm with plenty of maple syrup drizzled on top.
Notes
For a festive flair, garnish with a sprinkle of nutmeg or cinnamon, and consider adding fresh berries or banana slices.
