Preparation

- Wash and cube the potatoes into bite-sized pieces.
- Chop the bell peppers and shallots into similar-sized pieces.

Dressing the Ingredients
- In a large bowl, combine the potatoes, bell peppers, shallots, bacon, and sausage.

Baking Instructions
- Spread the mixture onto the prepared sheet pan in an even layer.
- Bake in the preheated oven for about 25-30 minutes or until the potatoes are golden and crispy, stirring halfway through for even cooking.
Adding the Eggs
- After the potatoes mixture is done, create small wells in the mixture for the eggs.
- Crack the eggs into each well and return to the oven for an additional 5-7 minutes or until the eggs are set to your liking.
Notes
For extra crispiness, use a mix of russet and sweet potatoes. Feel free to switch up the veggies based on what you have on hand, like zucchini or spinach. Adjust the spices to suit your taste; adding a bit of cayenne for heat or cumin for depth can be delightful.
