Ingredients

  • 2 lbs potatoes (or sweet potatoes)
  • 2 medium bell peppers (red, orange, yellow, or green)
  • 2 large shallots
  • 6 to 8 slices smoked bacon
  • 8 to 10 links breakfast sausage
  • 1/4 cup avocado or olive oil
  • 1/4 cup pure maple syrup
  • 1 1/2 tsp sea salt
  • to taste ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 tbsp fresh chopped parsley
  • a few dashes hot sauce (your favorite)
  • 1 cup cherry tomatoes
  • 4 to 5 large eggs
  • 2 tbsp fresh chives
  • 2 tbsp dill
  • 2 tbsp parsley
  • 1 large avocado (quartered and sliced)
  • Ketchup and hot sauce (for serving)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a large sheet pan with parchment paper for easy cleanup.
  3. Wash and cube the potatoes into bite-sized pieces.
  4. Chop the bell peppers and shallots into similar-sized pieces.
  5. Cut the bacon into smaller strips and slice the sausage links.
Dressing the Ingredients
  1. In a large bowl, combine the potatoes, bell peppers, shallots, bacon, and sausage.
  2. Drizzle the mixture with avocado or olive oil and maple syrup.
  3. Season with sea salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and chopped parsley. Toss everything well until evenly coated.
Baking Instructions
  1. Spread the mixture onto the prepared sheet pan in an even layer.
  2. Bake in the preheated oven for about 25-30 minutes or until the potatoes are golden and crispy, stirring halfway through for even cooking.
Adding the Eggs
  1. After the potatoes mixture is done, create small wells in the mixture for the eggs.
  2. Crack the eggs into each well and return to the oven for an additional 5-7 minutes or until the eggs are set to your liking.

Notes

For extra crispiness, use a mix of russet and sweet potatoes. Feel free to switch up the veggies based on what you have on hand, like zucchini or spinach. Adjust the spices to suit your taste; adding a bit of cayenne for heat or cumin for depth can be delightful.
