Preparation
- Preheat your oven to 350°F and grease a medium-sized baking dish (7x9 recommended).
- In a large pot, cook the pasta according to the package directions. Drain and set aside.
- Return the drained pasta to the pot. Mix in the marinara sauce, pulled chicken, half of the mozzarella, half of the parmesan, and Italian seasoning.
- Allow the mixture to simmer over medium-low heat for a few minutes to meld the flavors together.
- Spread the pasta mixture evenly into the greased baking dish. Sprinkle the remaining mozzarella and parmesan cheese on top.
- In a small bowl, combine the panko bread crumbs, melted butter, and garlic powder. Mix well, then sprinkle the breadcrumb mixture evenly over the top of the casserole.
- Bake uncovered in the center of the oven for about 15 minutes, or until the panko crust turns golden brown.
- Serve hot, either on its own or alongside a fresh salad, roasted veggies, or warm breadsticks.
Notes
Feel free to customize by adding vegetables like spinach or bell peppers for more nutrients. Use gluten-free pasta for dietary needs.
