Easy Chicken Parmesan Casserole

Main Ingredients
  • 1 small rotisserie chicken (pulled into small pieces) Using rotisserie chicken cuts down on cooking time.
  • 0.5 lb pasta (about 3 cups dry) Any type of pasta can be used.
  • 1 jar 24 oz marinara or spaghetti sauce
  • 2 cups shredded mozzarella cheese Divide for mixing and topping.
  • 0.5 cup grated parmesan cheese Divide for mixing and topping.
  • 0.75 cup panko bread crumbs
  • 2 tbsp melted butter
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder

Method
 

Preparation
  1. Preheat your oven to 350°F and grease a medium-sized baking dish (7x9 recommended).
  2. In a large pot, cook the pasta according to the package directions. Drain and set aside.
  3. Return the drained pasta to the pot. Mix in the marinara sauce, pulled chicken, half of the mozzarella, half of the parmesan, and Italian seasoning.
  4. Allow the mixture to simmer over medium-low heat for a few minutes to meld the flavors together.
  5. Spread the pasta mixture evenly into the greased baking dish. Sprinkle the remaining mozzarella and parmesan cheese on top.
  6. In a small bowl, combine the panko bread crumbs, melted butter, and garlic powder. Mix well, then sprinkle the breadcrumb mixture evenly over the top of the casserole.
  7. Bake uncovered in the center of the oven for about 15 minutes, or until the panko crust turns golden brown.
  8. Serve hot, either on its own or alongside a fresh salad, roasted veggies, or warm breadsticks.

Notes

Feel free to customize by adding vegetables like spinach or bell peppers for more nutrients. Use gluten-free pasta for dietary needs.
