Preparation
- In a skillet, heat the olive oil over medium heat. Once it’s shimmering, add the ground beef and taco seasoning. Cook until the beef is browned, breaking it apart with a spoon as it cooks.
- Place one tortilla in the skillet. Sprinkle cheese on half of the tortilla and then add a generous portion of the beef mixture on top of the cheese.
- Fold the tortilla in half to cover the fillings. Cook until the bottom side is golden brown, about 2-3 minutes, then flip and cook the other side until it’s also golden brown.
- Repeat the process with the remaining tortillas, adding more olive oil to the skillet as needed.
- Serve your quesadillas warm, with sour cream and salsa on the side for dipping.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For reheating, use a skillet or microwave.
