  • 1 pound ground beef Use lean ground beef for less grease.
  • 1 teaspoon taco seasoning Adjust based on spice preference.
  • 4 large flour tortillas For the best texture.
  • 2 cups shredded cheese (cheddar or Monterey Jack) Mix of cheeses can enhance flavor.
  • 1 tablespoon olive oil More may be needed for crispy tortillas.

  • Sour cream For dipping.
  • Salsa For dipping.

Method
 

Preparation
  1. In a skillet, heat the olive oil over medium heat. Once it’s shimmering, add the ground beef and taco seasoning. Cook until the beef is browned, breaking it apart with a spoon as it cooks.
  2. Place one tortilla in the skillet. Sprinkle cheese on half of the tortilla and then add a generous portion of the beef mixture on top of the cheese.
  3. Fold the tortilla in half to cover the fillings. Cook until the bottom side is golden brown, about 2-3 minutes, then flip and cook the other side until it’s also golden brown.
  4. Repeat the process with the remaining tortillas, adding more olive oil to the skillet as needed.
  5. Serve your quesadillas warm, with sour cream and salsa on the side for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For reheating, use a skillet or microwave.
