  • 1 cup unsalted butter, softened Ensure butter is at room temperature for easier blending.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs Beaten in one at a time.
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour if needed.
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Reduce if using salted butter.
  • 2 cups chocolate chips Experiment with different types of chocolate chips.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, baking soda, and salt. Gradually add this mixture to the butter mixture, stirring until just combined.
  5. Fold in the chocolate chips until evenly distributed throughout the batter.
  6. Drop tablespoonfuls of dough onto ungreased baking sheets, spacing them a few inches apart.
Baking
  1. Bake for 9-11 minutes, or until the edges are set but the centers are still soft.
  2. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Delightful on their own or paired with a glass of cold milk. For extra flavor, sprinkle sea salt on top before baking. Store in an airtight container for up to one week.
