  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 cups spinach

  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the sun dried tomatoes and cook for another 2 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the gnocchi and cook according to package instructions.
  5. Stir in the coconut milk, spinach, basil, and oregano.
  6. Simmer for 5-10 minutes, then season with salt and pepper to taste.
  7. Serve warm and enjoy!
