Preparation
  1. Thinly slice cucumbers and red onion.
  2. In a bowl, whisk together vinegar, salt, and pepper.
  3. Toss the cucumbers and red onion in the dressing.
  4. Add chopped fresh herbs and mix well.
  5. Serve chilled as a refreshing side dish.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 2 days. Cucumbers may become soggy over time. Consider adding other vegetables for extra flavor and color, or a dollop of yogurt for creaminess.
