  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, diced Use fresh mozzarella for the best taste.
  • 1/4 cup fresh basil leaves, chopped Feel free to adjust the amount to suit your taste.
  • 2 tbsp olive oil Adjust to taste.
  • 1 tbsp balsamic vinegar Adjust to taste.

Method
 

Preparation
  1. In a large bowl, combine the sliced cucumber, halved cherry tomatoes, and diced mozzarella.
  2. Add the chopped basil, olive oil, and balsamic vinegar.
  3. Toss gently to combine all the ingredients.
  4. Season with salt and pepper to taste.
  5. Serve immediately, or you can refrigerate the salad for up to an hour before serving.

Notes

This salad can be served as a refreshing side dish or a light main course. Store leftovers in an airtight container in the refrigerator and consume within a day for the best texture.
