Ingredients
  

For the Mojo Marinade
  • 1 cup orange juice Freshly squeezed is best
  • 1 cup lime juice Freshly squeezed is best
  • 6 cloves minced garlic
  • 1/2 cup olive oil
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1/2 tsp red pepper flakes Adjust for desired heat
  • 1 tbsp orange zest
Main Ingredients
  • 4 pieces chicken thighs Bone-in, skin-on or skinless according to preference

Method
 

Preparation
  1. In a bowl, mix together orange juice, lime juice, minced garlic, olive oil, cumin, oregano, salt, black pepper, red pepper flakes, and orange zest to create the mojo marinade.
  2. Place chicken thighs in a resealable bag or shallow dish and pour the mojo marinade over them, ensuring they are well coated. Marinate in the refrigerator for at least 1 hour, or overnight for the best results.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and place it on the grill. Grill each thigh for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  3. Let the chicken rest for a few minutes before serving to lock in the juices.

Notes

Serve with rice and black beans or a fresh salad. For presentation, garnish with extra lime wedges and fresh herbs. For longer storage, chicken can last in the refrigerator for 3-4 days and can be frozen for up to 2 months.
