- In a bowl, mix together orange juice, lime juice, minced garlic, olive oil, cumin, oregano, salt, black pepper, red pepper flakes, and orange zest to create the mojo marinade.
- Place chicken thighs in a resealable bag or shallow dish and pour the mojo marinade over them, ensuring they are well coated. Marinate in the refrigerator for at least 1 hour, or overnight for the best results.
Cooking
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and place it on the grill. Grill each thigh for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before serving to lock in the juices.
