- In a large bowl, combine puffed quinoa, almond butter, honey (or maple syrup), vanilla extract, and salt.
- Mix until well combined, ensuring each puffed quinoa piece is coated with the almond butter and sweetener.
- Line a baking sheet with parchment paper to prevent sticking.
- Pour the mixture onto the prepared baking sheet and spread it out evenly. Use a spatula to press it down slightly for better shape.
- Refrigerate for about 30 minutes until firm.
- Cut into bite-sized pieces and serve as a crunchy snack.
Notes
These bites can be served plain, or try dipping them in yogurt or drizzling some extra honey or nut butter on top. Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Thaw at room temperature before serving.
