  • 1.5 lbs boneless, skinless chicken breasts
  • 1 whole bell pepper (any color), sliced
  • 1 whole onion, sliced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 whole lime, juiced
  • Flour or corn tortillas, for serving Choose based on preference

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Layer the sliced bell pepper and onion on top of the chicken.
  3. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
  4. Sprinkle the spice mixture evenly over the chicken and vegetables.
  5. Squeeze the lime juice over the mixture.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  2. Once cooked, shred the chicken using two forks, mixing it with the vegetables and juices.
Serving
  1. Serve in warm tortillas with your choice of toppings.

Notes

For added flavor, consider marinating the chicken in the spices and lime juice for a few hours before cooking. You can also use different types of peppers or add jalapeƱos for a spicy kick. Leftovers can be stored in an airtight container in the refrigerator for up to three days, or in the freezer for two months.
