Preparation
- Place the chicken breasts at the bottom of the crockpot.
- Layer the sliced bell pepper and onion on top of the chicken.
- In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
- Sprinkle the spice mixture evenly over the chicken and vegetables.
- Squeeze the lime juice over the mixture.
Cooking
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
- Once cooked, shred the chicken using two forks, mixing it with the vegetables and juices.
Serving
- Serve in warm tortillas with your choice of toppings.
Notes
For added flavor, consider marinating the chicken in the spices and lime juice for a few hours before cooking. You can also use different types of peppers or add jalapeƱos for a spicy kick. Leftovers can be stored in an airtight container in the refrigerator for up to three days, or in the freezer for two months.
