Preparation
- Preheat the air fryer to 390°F.
- In a shallow bowl, mix the breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, chili powder, salt, and pepper.
- In another shallow bowl, whisk the eggs with a pinch of salt and pepper.
- Pat the chicken cutlets dry with a paper towel. Dip each piece into the egg mixture, letting excess drip off, and then coat in the breadcrumb mixture, pressing it lightly onto the chicken.
- Place the coated chicken on a plate.
Cooking
- Spray the air fryer basket with olive oil spray. Arrange the chicken cutlets in a single layer without overlapping. Spray the top of the chicken with more olive oil spray.
- Cook for 5 minutes, then flip the chicken, spray again, and cook for another 5 minutes.
- Open the air fryer and spread a layer of sauce over each piece. Top with mozzarella cheese and a sprinkle of parmesan. Cook for an additional 2 minutes until the cheese is melted.
- Remove the chicken from the air fryer and let it rest for 5 minutes.
Notes
Serve over fresh spinach, alongside a crisp salad, or with pasta to soak up the delicious sauce. Garnish with chopped basil and parsley for a fresh touch. To store leftovers, cool completely and place in an airtight container for up to 3 days. Reheat in the air fryer for best results.
