This air-fried Chicken Parmesan offers all the flavor of the classic dish but in a healthier, crispier version that's quick to make for busy weeknight dinners.

Ingredients
  

For the Chicken
  • 2 pieces chicken breasts – cut into cutlets Or use store-bought cutlets
  • 2 cups seasoned panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon granulated garlic Or garlic powder
  • 1 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2-3 large eggs
  • spray Olive oil cooking spray
For Serving
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • Chopped basil and parsley for topping

Method
 

Preparation
  1. Preheat the air fryer to 390°F.
  2. In a shallow bowl, mix the breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, chili powder, salt, and pepper.
  3. In another shallow bowl, whisk the eggs with a pinch of salt and pepper.
  4. Pat the chicken cutlets dry with a paper towel. Dip each piece into the egg mixture, letting excess drip off, and then coat in the breadcrumb mixture, pressing it lightly onto the chicken.
  5. Place the coated chicken on a plate.
Cooking
  1. Spray the air fryer basket with olive oil spray. Arrange the chicken cutlets in a single layer without overlapping. Spray the top of the chicken with more olive oil spray.
  2. Cook for 5 minutes, then flip the chicken, spray again, and cook for another 5 minutes.
  3. Open the air fryer and spread a layer of sauce over each piece. Top with mozzarella cheese and a sprinkle of parmesan. Cook for an additional 2 minutes until the cheese is melted.
  4. Remove the chicken from the air fryer and let it rest for 5 minutes.

Notes

Serve over fresh spinach, alongside a crisp salad, or with pasta to soak up the delicious sauce. Garnish with chopped basil and parsley for a fresh touch. To store leftovers, cool completely and place in an airtight container for up to 3 days. Reheat in the air fryer for best results.
