Preparation
- In a medium bowl, combine mozzarella cheese, Parmesan cheese, chopped pepperoni, and basil (if using).
- Spoon about 2 tablespoons of the cheese and pepperoni mixture onto the center of each egg roll wrapper.
- Add about 1 teaspoon of pizza sauce over the cheese mixture on each wrapper.
- Fold the bottom edge of the wrapper over the filling and fold in the sides.
- Roll up tightly to form an egg roll. Moisten the top edge with water to seal.
Cooking
- Preheat your air fryer to 400°F (200°C).
- Lightly spray the egg rolls with cooking spray.
- Place the egg rolls in the air fryer basket in a single layer and air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serving
- Serve immediately with extra pizza sauce for dipping.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for best results. Don't overfill the wrappers to avoid spills. Experiment with different fillings like veggies or different types of cheese!
