Ingredients
  

For the Filling
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mini pepperoni, chopped
  • 1 tablespoon chopped fresh basil (optional) Use if desired.
For Assembly
  • 12 pieces egg roll wrappers
  • 1/2 cup pizza sauce For filling and dipping.
  • 1 can cooking spray For spraying egg rolls before air frying.

Method
 

Preparation
  1. In a medium bowl, combine mozzarella cheese, Parmesan cheese, chopped pepperoni, and basil (if using).
  2. Spoon about 2 tablespoons of the cheese and pepperoni mixture onto the center of each egg roll wrapper.
  3. Add about 1 teaspoon of pizza sauce over the cheese mixture on each wrapper.
  4. Fold the bottom edge of the wrapper over the filling and fold in the sides.
  5. Roll up tightly to form an egg roll. Moisten the top edge with water to seal.
Cooking
  1. Preheat your air fryer to 400°F (200°C).
  2. Lightly spray the egg rolls with cooking spray.
  3. Place the egg rolls in the air fryer basket in a single layer and air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serving
  1. Serve immediately with extra pizza sauce for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for best results. Don't overfill the wrappers to avoid spills. Experiment with different fillings like veggies or different types of cheese!
