Ingredients
  

For the Filling
  • 2 cups apples, peeled and diced Use a mix of sweet and tart apples if desired.
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon Adjust to taste.
  • 1 tablespoon lemon juice
For Assembly
  • 8 small flour tortillas
  • 1/4 cup sugar (for coating) For an extra sweet finish.

Preparation
  1. In a bowl, mix together the diced apples, brown sugar, cinnamon, and lemon juice.
  2. Scoop about 2 tablespoons of the filling onto each tortilla and roll it tightly.
  3. Lightly spray the rolled taquitos with cooking spray and roll them in sugar for added sweetness.
Cooking
  1. Place the taquitos in the air fryer basket in a single layer to ensure they cook evenly.
  2. Air fry at 350°F for 8-10 minutes, flipping halfway through for golden crispy finish.
Serving
  1. Serve warm, dusted with extra sugar, ideally with a scoop of vanilla ice cream on the side.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the air fryer for a few minutes until warm and crispy again. Use a variety of apples for best flavor, and avoid overfilling tortillas.
