  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 medium ripe banana, sliced You can replace with 1/2 cup berries if desired.

  1. Start by lining a loaf pan with parchment paper or use a rimmed baking sheet for thinner yogurt bark.
  2. In a medium mixing bowl, combine the yogurt, peanut butter, cinnamon, and vanilla extract. Whisk until smooth.
  3. Taste the mixture and sweeten with 2 tablespoons of honey or maple syrup if desired.
  4. Fold in the sliced banana gently.
  5. Spoon the mixture into the prepared pan, smoothing the top with a rubber spatula, or freeze in popsicle molds.
  6. Sprinkle toppings like granola or chocolate chips if desired.
  7. Place the pan in the freezer for about 3 hours, or until set.
Serving
  1. Once frozen, slice into 8 to 10 bars and let sit for 5 minutes at room temperature before serving.

Notes

For a dairy-free option, use coconut, almond, or soy yogurt. You can swap the banana for your favorite berries for variety. Store in an airtight container in the freezer for up to 3 months, separating layers with parchment paper.
