Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, garlic, salt, and pepper. Mix until well combined and form into meatballs.
Cooking
- In a pan over medium heat, add olive oil. Brown the meatballs on all sides for about 5-7 minutes. Remove and set aside.
- In the same pan, add sliced mushrooms and cook until softened.
- Pour in heavy cream and chicken broth, stirring well.
- Add the meatballs back into the pan and simmer for 15 minutes until cooked through.
Serving
- Garnish with fresh parsley and serve hot, ideally with pasta, rice, or a fresh salad.
Notes
Ensure all ingredients, especially the ground chicken, are at room temperature before mixing. For a crunchier texture, bake the meatballs in the oven for 20 minutes after browning. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
