Preparation
  1. Thinly slice the cucumbers and place them in a large bowl.
  2. In a separate bowl, combine the dairy-free yogurt, olive oil, apple cider vinegar, minced garlic, salt, and pepper.
  3. Pour the dressing over the cucumbers and toss to combine.
  4. Let it sit for about 10 minutes to allow the flavors to meld.
  5. Garnish with fresh dill or parsley before serving.

Notes

This salad is best served chilled. Store any leftovers in an airtight container in the fridge for 2-3 days. The flavor will still be delicious even if the texture changes.
