Ingredients
  

Vegetables
  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup corn (canned or frozen)
  • 1/2 cup chopped cilantro
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chipotle sauce
  • 1 tablespoon honey
Toppings
  • 2 cups Fritos corn chips Add just before serving for crunch.

Method
 

Preparation
  1. In a large bowl, mix the shredded green and red cabbage, shredded carrots, corn, and chopped cilantro.
  2. In another bowl, whisk together mayonnaise, apple cider vinegar, chipotle sauce, and honey to create the dressing.
  3. Pour the dressing over the vegetables and toss everything until well combined.
  4. Add salt and pepper to taste.
  5. Before serving, gently fold in Fritos for a delicious crunch.

Notes

For added flavor, consider including diced jalapeƱos or bell peppers. You can use Greek yogurt instead of mayonnaise for a lighter dressing. Preparing the cabbage and veggies a few hours in advance will allow the flavors to meld nicely. Store leftovers in an airtight container in the refrigerator for up to 2 days, adding more Fritos when serving.
