Preparation
- In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, soy sauce, salt, and pepper. Mix well to create a marinade.
- Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
Cooking
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for a few minutes.
Serving
- Serve hot, garnished with fresh cilantro if desired.
Notes
Great served with jasmine rice or a fresh salad. Extra lime juice or zest can be drizzled over the top for added flavor. For extra flavor, marinate overnight. Adjust lime juice to taste.
