Coconut Lime Chicken

Ingredients
  

For the marinade
  • 1 cup coconut milk Canned coconut milk is recommended.
  • 2 limes Juice of 2 limes Adjust according to taste.
  • 1 lime Zest of 1 lime Provides additional lime flavor.
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce Can substitute with tamari for gluten-free.
  • 1 teaspoon salt Adjust according to preference.
  • 1 teaspoon pepper Black pepper preferred.
  • Optional: fresh cilantro for garnish
Main ingredients
  • 4 pieces chicken thighs Skin-on or skinless, as per preference.

Method
 

Preparation
  1. In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, soy sauce, salt, and pepper. Mix well to create a marinade.
  2. Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  4. Remove from the grill and let rest for a few minutes.
Serving
  1. Serve hot, garnished with fresh cilantro if desired.

Notes

Great served with jasmine rice or a fresh salad. Extra lime juice or zest can be drizzled over the top for added flavor. For extra flavor, marinate overnight. Adjust lime juice to taste.
