Ingredients
  

For the crepes
  • 1 cup all-purpose flour or substitute with whole wheat flour or gluten-free flour
  • 2 large eggs
  • 1 cup milk use any milk of your choice
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon plus some for serving
  • 2 tablespoons sugar adjust to taste
  • 1 tablespoon butter for cooking

Method
 

Preparation
  1. In a mixing bowl, combine the flour, eggs, milk, vanilla extract, 1 tablespoon of cinnamon, and sugar. Mix until smooth.
  2. Heat a non-stick skillet over medium heat and melt a little butter.
  3. Pour a small amount of batter into the skillet, swirling to coat the bottom. Cook for 2-3 minutes until the edges begin to lift, then flip and cook for another minute.
  4. Repeat until all batter is used, stacking crepes on a plate.
Serving
  1. To serve, sprinkle with remaining cinnamon and a little sugar, roll up, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet or microwave. Tips: Use a non-stick skillet, don't overcrowd the pan, and adjust sweetness to taste.
