- In a mixing bowl, combine the flour, eggs, milk, vanilla extract, 1 tablespoon of cinnamon, and sugar. Mix until smooth.
- Heat a non-stick skillet over medium heat and melt a little butter.
- Pour a small amount of batter into the skillet, swirling to coat the bottom. Cook for 2-3 minutes until the edges begin to lift, then flip and cook for another minute.
- Repeat until all batter is used, stacking crepes on a plate.
Serving
- To serve, sprinkle with remaining cinnamon and a little sugar, roll up, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet or microwave. Tips: Use a non-stick skillet, don't overcrowd the pan, and adjust sweetness to taste.
