Ingredients
  

Main ingredients
  • 1 cup rolled oats
  • 1/2 cup almond butter or peanut butter Almond butter can be substituted with cashew butter.
  • 1/4 cup honey or maple syrup Maple syrup can be used for a vegan version.
  • 1 tablespoon ground cinnamon Use freshly ground cinnamon for best flavor.
  • 1/4 cup protein powder (vanilla or unflavored) Add more if the mixture is too sticky.
  • 1/4 cup shredded coconut Optional.
For the glaze
  • 1/2 cup Greek yogurt or cream cheese
  • 1 tablespoon honey
  • a pinch cinnamon

Method
 

Preparation
  1. In a large bowl, combine the rolled oats, almond butter, honey, ground cinnamon, protein powder, and shredded coconut (if using).
  2. Mix until everything is well combined.
  3. Roll the mixture into small balls, about 1 inch in size.
  4. Place the bites on a parchment-lined baking sheet.
  5. For the glaze, mix the Greek yogurt (or cream cheese), honey, and cinnamon in a small bowl until smooth.
  6. Drizzle the glaze over the protein bites.
  7. Refrigerate for about 30 minutes to let them set.

Notes

Store your protein bites in an airtight container in the refrigerator for up to one week. Freeze for longer storage and thaw before serving.
