Preparation
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, oats, applesauce (or grated apple), egg, cinnamon, honey (or maple syrup), baking powder, and salt. Mix until well combined.
- Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
- Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
Baking
- Bake for 18–20 minutes or until the bites are set and lightly golden on top.
- Let the bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
These bites are best enjoyed warm. They can be served plain or with a drizzle of extra honey or maple syrup. Pairs well with fresh fruit or yogurt. Store in the fridge for up to 4 days or freeze for longer storage.
