Preparation
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  2. In a mixing bowl, combine cottage cheese, oats, applesauce (or grated apple), egg, cinnamon, honey (or maple syrup), baking powder, and salt. Mix until well combined.
  3. Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
  4. Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
Baking
  1. Bake for 18–20 minutes or until the bites are set and lightly golden on top.
  2. Let the bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

These bites are best enjoyed warm. They can be served plain or with a drizzle of extra honey or maple syrup. Pairs well with fresh fruit or yogurt. Store in the fridge for up to 4 days or freeze for longer storage.
