Ingredients

  • 1 cup long-grain white rice (rinsed)
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup fresh cilantro (chopped) Use fresh for best flavor.
  • 1 lime (juice freshly squeezed)
  • 1 clove garlic (minced)

Method
 

Cooking the Rice
  1. In a pot, combine the rinsed rice, water, olive oil, and salt. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
Finishing Touches
  1. Once cooked, remove the pot from heat and let it sit for a few minutes.
  2. Fluff the rice with a fork, then stir in the chopped cilantro, freshly squeezed lime juice, and minced garlic. Mix well until all ingredients are combined.

Notes

To store leftover Cilantro Rice, let it cool completely and place it in an airtight container. It can be kept in the refrigerator for up to 3 days. Freeze in a freezer-safe container for about a month if storing longer. Adjust lime juice to taste and consider adding other ingredients like diced tomatoes or bell peppers.
