  • ¼ cup chopped fresh cilantro leaves For vibrant flavor.
  • 3 tablespoons extra virgin olive oil Divided into two portions.
  • 1 tablespoon lime zest Freshly grated.
  • 2 tablespoons freshly squeezed lime juice Adjust to taste.
  • 2 teaspoons chili powder Adds a bit of spice.
  • 1 teaspoon ground cumin For depth of flavor.
  • 1 teaspoon kosher salt Season well.
  • 1 teaspoon freshly ground black pepper Enhances flavor.
For the Chicken
  • 2 pounds boneless, skinless chicken thighs Main protein for the dish.

Method
 

Preparation
  1. In a medium bowl, combine the chopped cilantro, 2 tablespoons of olive oil, lime zest, lime juice, chili powder, cumin, salt, and black pepper. Mix well to create a marinade.
  2. Place the chicken thighs in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring the thighs are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
Cooking
  1. Preheat your grill or skillet over medium-high heat. Add the remaining tablespoon of olive oil.
  2. Remove the chicken from the marinade and discard any leftover marinade. Cook the chicken thighs for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F.
  3. Once done, remove the chicken from heat and let it rest for a few minutes before serving.

Notes

For even more flavor, marinate the chicken for longer—up to 12 hours if possible. If you prefer grilling, make sure the grill is hot enough; this helps to sear the chicken beautifully. Don’t skip letting the chicken rest after cooking; this keeps it moist and juicy.
