Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the eggs and vanilla extract to the mix, stirring until smooth.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture. Mix until just combined.
- Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.
Baking
- Scoop out tablespoon-sized portions of dough and roll them into balls.
- Roll each ball in powdered sugar to coat generously.
- Place the coated balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers remain soft.
- Allow them to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
These cookies can be served with a glass of milk or coffee. For an extra treat, try serving them as ice cream sandwiches with vanilla ice cream.
