Ingredients
  

Cookie Base
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Coating
  • 1/2 cup powdered sugar For coating the cookie balls

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs and vanilla extract to the mix, stirring until smooth.
  4. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Mix until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.
Baking
  1. Scoop out tablespoon-sized portions of dough and roll them into balls.
  2. Roll each ball in powdered sugar to coat generously.
  3. Place the coated balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake for 10-12 minutes, or until the edges are set but the centers remain soft.
  5. Allow them to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

These cookies can be served with a glass of milk or coffee. For an extra treat, try serving them as ice cream sandwiches with vanilla ice cream.
