Ingredients
  

For the Marinade
  • 3 tablespoons olive oil
  • 2 tablespoons minced chipotle peppers Adjust to taste
  • 4 cloves garlic Minced
  • 1/4 cup honey
  • 2 tablespoons lime juice Freshly squeezed
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Chicken
  • 4 pieces bone-in chicken thighs Skin-on for best flavor

Method
 

Preparation
  1. Preheat your oven to 400°F. Line a baking sheet with foil or parchment paper for easy cleanup.
  2. In a medium bowl, whisk together olive oil, minced chipotle peppers, garlic, honey, lime juice, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Place the chicken thighs in a large bowl or a zip-top bag. Pour the marinade over the chicken, ensuring each piece is well coated. Let it marinate in the refrigerator for at least 30 minutes or up to 2 hours.
Cooking
  1. Take the chicken out of the marinade and arrange it on the prepared baking sheet, skin side up.
  2. Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F and the edges are caramelized.
  3. For an extra crispy finish, switch your oven to broil and broil the chicken for 2 to 3 minutes, keeping a close eye on it.
Serving
  1. Once done, remove the chicken from the oven and let it rest for about 5 minutes before serving.

Notes

These chicken thighs pair well with rice, salad, or roasted vegetables. For added flavor, drizzle with extra honey or squeeze lime juice before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
