- In a large pot, combine the chopped cherries and sugar. Stir well and let sit for 10 minutes to allow the cherries to release their juices.
- Add the amaretto liqueur, lemon juice, and almond extract to the pot. Mix everything together until well combined.
Cooking
- Cook the mixture over medium heat, stirring constantly until it begins to boil.
- Once the mixture is boiling, add the fruit pectin and continue to boil for 1-2 minutes, stirring, until the mixture thickens.
- Remove the pot from heat and let cool slightly.
- Pour the jam into sterilized jars, seal the jars and let them cool completely before placing them in the refrigerator.
Notes
Store your Cherry Amaretto Jam in the refrigerator once cooled completely. If sealed properly, it can last for up to three weeks. For longer storage, consider freezing the jam, leaving space in the jar before freezing as it may expand. Ensure your jars are sterilized to avoid spoilage.
