Ingredients

  • 1 lb ground beef (lean or regular, your choice)
  • 1 tablespoon olive oil for cooking the filling
  • 1 cup mushrooms, sliced (button or cremini mushrooms work best)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese (or a blend of mozzarella and cheddar)
  • 4 pieces pita pockets (whole wheat or white)
For the Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, finely grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Method
 

Preparation of Tzatziki Sauce
  1. In a bowl, mix the Greek yogurt, grated cucumber, dill, lemon juice, olive oil, minced garlic, and a pinch of salt and pepper. Stir until well combined. Cover and refrigerate the sauce while you prepare the filling.
Preparation of Beef and Mushroom Filling
  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft.
  2. Then, add the minced garlic, mushrooms, and ground beef. Cook until the beef is browned.
  3. Stir in the oregano, cumin, smoked paprika, salt, and pepper. Mix in the shredded mozzarella cheese until it melts and blends well.
Assembly
  1. Take the pita pockets and cut them open to make a pocket.
  2. Stuff each pocket with the beef and mushroom filling, filling them generously.
Serving
  1. Serve the pita pockets warm with a generous drizzle of the tzatziki sauce on top or on the side for dipping.
