Wet Ingredients
  • 3 pieces ripe bananas, mashed Ensure bananas are very ripe for best flavor.
  • 1/2 cup cream cheese, softened Soften cream cheese for easier mixing.
  • 1/3 cup butter, melted Melt butter before adding.
  • 1 teaspoon vanilla extract Adds flavor.
  • 2 pieces eggs Whisked before adding to the batter.
Dry Ingredients
  • 1/2 cup sugar Granulated sugar.
  • 1/4 cup brown sugar Can use light or dark brown sugar.
  • 1 teaspoon baking soda Leavening agent.
  • 1/4 teaspoon salt Enhances flavor.
  • 1 1/2 cups all-purpose flour Can substitute gluten-free flour if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas, cream cheese, sugar, brown sugar, melted butter, and vanilla extract until smooth.
  3. In another bowl, whisk together the baking soda, salt, and flour.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. In a separate bowl, whisk the eggs and then fold them into the batter.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm, optionally with whipped cream or powdered sugar. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for about a week. For longer storage, freeze slices for up to 3 months.
