Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the mashed bananas, cream cheese, sugar, brown sugar, melted butter, and vanilla extract until smooth.
- In another bowl, whisk together the baking soda, salt, and flour.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- In a separate bowl, whisk the eggs and then fold them into the batter.
Baking
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Serve warm, optionally with whipped cream or powdered sugar. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for about a week. For longer storage, freeze slices for up to 3 months.
