  • 1 piece flatbread or pizza dough Serves as the crispy base for your toppings
Toppings
  • 4 oz goat cheese Crumble for a creamy tang
  • 2 large onions Thinly sliced, sweet onions preferred
  • 2 tbsp olive oil For cooking the onions
  • 1 tbsp fresh thyme leaves Adds herbal fragrance
  • Salt to taste salt Balances flavors
  • Pepper to taste pepper Adds a hint of warmth

Method
 

Preparation
  1. In a skillet, warm 2 tablespoons of olive oil over medium heat. Add 2 thinly sliced onions along with a pinch of salt, allowing them to begin softening.
  2. Cook the onions slowly, stirring occasionally, for about 20-25 minutes until they are golden brown.
  3. Preheat your oven according to the flatbread package instructions, or to 425°F if using pizza dough. Roll out your dough to the desired thickness.
  4. Spread the caramelized onions evenly across the flatbread. Crumble 4 ounces of goat cheese and sprinkle 1 tablespoon of fresh thyme on top. Season with salt and pepper.
  5. Bake the flatbread in the preheated oven for 10-15 minutes until the edges are crispy and the cheese is soft.
  6. Remove from the oven and allow it to cool for a few minutes before slicing.

Notes

For extra flavor, consider adding balsamic glaze or honey on top before serving. You can swap goat cheese for feta or mozzarella. Make sure to slice onions thinly for even cooking and caramelization.
